Sirius started as a star. Now it’s your espresso.

This lot comes from the Gatta farm of the Dukamo family, in the Sidama region of Ethiopia – grown at 1,900–2,000 meters above sea level in the shade of native trees over 200 years old. The Dukamo brothers started from scratch with a belief that coffee from Sidama deserved more attention. Fifteen years later they have 3 farms, 42 washing stations and 6 dry mills. This is what consistency tastes like.

The process is a Sleeping Bag Natural – cherries are sorted by ripeness and dried outdoors in sealed bags that slow down moisture loss and concentrate flavor without the risk of over-fermentation. The result is clean, sweet and remarkably precise for a natural.

We roasted this one for espresso because the sweetness and fruitiness hold up well under pressure. Literally. Roasted in Warsaw, built for the portafilter.

Sirius is a natural Ethiopian espresso that knows how to behave in the basket – fruity, but with acidity kept in check, sweet without being cloying.

Pear and strawberry give the shot its juiciness, while caramel sweetness balances it out and guarantees a satisfying finish. A clarity and cleanliness you don't usually expect from naturals out of the group head.

Good on its own, even better with milk. One of those coffees where dialing in the recipe doesn't give you a headache.

Built for espresso – start at a 1:2.3 ratio, 27–30 seconds, water around 92°C. At extractions above 25 seconds you'll get the fruitiness without excessive acidity.

With milk it absolutely shines – strawberry and caramel come together into an almost yoghurt-like flat white or latte. Don't overthink it, just let it work.

As filter it also holds up if you're curious – V60 or Chemex, medium grind, 89–91°C – you'll pull more of the pear and green tea notes sitting underneath. A different cup, but still worth it.
