Coffee roasted a maximum of 14 days ago.
Some coffees tell a story with every sip. El Palmar is exactly that kind of Colombia – delicate, sweet and with a clarity that makes the cup feel both refined and personal. It brings soft fruit and gentle sweetness while staying clean and very drinkable.
This lot comes from El Palmar, a 2-hectare family farm in La Tolda, Toribio, Cauca, grown at 2117 meters above sea level – an exceptional altitude that slows cherry development and builds natural sweetness and complexity. The farm is managed by Zorayda Yule Vitonas, who has been working with coffee for 18 years alongside her husband and daughter. Cherries are handpicked every 21 days, selecting only those that reach the characteristic salmon pink colour of Pink Bourbon at optimal ripeness. After flotation and manual sorting, the coffee undergoes 24 hours of fermentation in tanks, is then pulped and fermented for a further 10 hours, washed three times to remove all mucilage, and dried for 16 days in a parabolic solar dryer. This lot was sourced through the Auction for Peace 2025 – a programme supporting coffee-growing communities in Cauca.

If you enjoy washed coffees that are clean, sweet and easy to read in the cup, this one works really well. It has juicy nectarine and sweet citrus character, a silky body typical of Pink Bourbon, and a long brown sugar finish that makes it great for everyday filter brewing.

El Palmar is a good example of how much a single producer, at the right altitude, with genuine care for every step of the process, can put into a cup. Zorayda’s Pink Bourbon from Cauca is rare, personal and worth paying attention to. A limited lot, roasted in Warsaw with a focus on clarity, sweetness and everyday drinkability.
El Palmar is a refined Colombian Pink Bourbon with a clean, sweet and very elegant profile.
Nectarine and sweet citrus bring gentle fruit character, while brown sugar adds warmth and a long, satisfying finish. The cup is silky, balanced and easy to read, with a natural sweetness that keeps everything in place.
It's delicate and expressive, but still calm and very drinkable – one of the cleanest Colombias we've had.
Works best as a filter coffee when you want something clean, sweet and refined. Use v60 or chemex, grind medium and brew with water around 92-94°C to keep the nectarine and citrus bright while preserving the silky body and brown sugar finish.
In aeropress, it becomes slightly fuller and rounder, with the sweetness coming forward and the body feeling warmer and more textured. Still very clean, just more compact and rich. As it cools, the fruit becomes more defined and the brown sugar note lingers longer, making the cup increasingly smooth and elegant.
A great choice when you want something refined and satisfying that stays consistent from first sip to last.
