Some coffees surprise you with how distinctive they can be. Pitalito is exactly that kind of Colombia – floral, delicate and with a clarity that makes every sip feel intentional. It brings rose and almond character while staying clean and very drinkable.
This lot comes from the Farms of Ambera in Pitalito, Huila, one of the most active specialty coffee areas in southern Colombia. The region sits between the Andean mountain ranges at elevations of 1,400–1,700 meters above sea level, where cooler temperatures and volcanic soils slow down cherry maturation and support the development of dense, high-quality coffee. The Pink Bourbon is processed using a co-fermentation with rose tea, which enhances the natural floral character of the variety and gives the cup its distinctive aromatic signature. SCA score 86.75.

Pitalito is a good example of how co-fermentation, when done with intention, can amplify what’s already there rather than overpower it. Pink Bourbon is naturally floral – the rose tea just turns up the volume. Roasted in Warsaw with a focus on clarity, sweetness and everyday drinkability.

Rose and floral notes bring a fragrant, tea-like character, while almond adds softness and a gentle sweetness. The cup is clean, refined and easy to read, with a lingering finish that keeps everything in place.
It's expressive and unique, but still calm and drinkable – a great Colombia for those who enjoy something floral and light.
Works best as a filter coffee when you want something aromatic, delicate and refined.
Use v60 or chemex, grind medium and brew with water around 90-92°C to keep the rose tea character bright and clean without any bitterness. In aeropress, it becomes slightly fuller and rounder, with the almond note coming forward and the body feeling a bit warmer.
Still floral, just more compact and sweet. As it cools, the rose and floral notes become more pronounced and the cup takes on an elegant, almost perfumed quality. Best enjoyed slowly and without distraction.
