Coffee roasted a maximum of 14 days ago.
Some coffees are simply good and easy to enjoy. Chelbesa is exactly that kind of Ethiopia – sweet, tea-like and clean in the cup. It brings juicy peach and aromatic Earl Grey character while staying balanced and very drinkable.
This lot comes from Banko Chelbesa in Gedeb woreda, within the Gedeo Zone of southern Ethiopia – part of the wider Yirgacheffe coffee-growing area, grown at 2000-2300 meters above sea level. Coffee here is produced by multigenerational smallholder families on small garden plots, often intercropped with enset, avocado and papaya. The high altitude and iron-rich, acidic soils of the region contribute to the bright, floral character classic Yirgacheffe is known for. For this washed lot, ripe cherries are depulped on the same day they’re harvested, fermented in clean tanks to remove the mucilage, then thoroughly washed and sun-dried on raised beds. SCA score 87.

Chelbesa is a good example of how clean and expressive a classic Yirgacheffe washed coffee can be. Smallholder families, careful day-of-harvest depulping and traditional washing – the fundamentals done right. Roasted in Warsaw with a focus on clarity, sweetness and everyday drinkability.

Peach and Earl Grey bring a juicy, tea-like character, while caramel adds warmth and a smooth, lingering finish. The cup is clean, balanced and easy to read, with enough complexity to keep things interesting.
It's expressive, but still calm and drinkable – a great everyday Ethiopia.
Works best as a filter coffee when you want something sweet, aromatic and easy to enjoy. Use v60, chemex or batch brew, grind medium and brew with water around 92-94°C to keep the peach and Earl Grey character bright without losing the caramel sweetness.
In aeropress, it becomes slightly fuller and more rounded, with the caramel note coming forward and the body feeling richer. Still clean, just more compact.
As it cools, the peach and bergamot become more pronounced and sweeter, making the cup even more aromatic and smooth. A great choice for daily brewing that stays consistent and satisfying.
