Coffee roasted a maximum of 14 days ago.
Some coffees are simply good and easy to enjoy. Girma Shonte is exactly that kind of Ethiopia – bright, fruity and clean in the cup. It brings vibrant tropical character with a citrusy edge while staying balanced and very drinkable.
This lot comes from Chire Woreda in the Sidamo region of Ethiopia, grown at 2236 meters above sea level – one of the higher elevations in the region, which contributes to the clarity and brightness in the cup. It is produced by Girma Shonte on his 2.5-hectare family farm, using agroforestry techniques that create natural shade and support soil health. Girma, his family and seasonal workers selectively handpick only ripe, red cherries, which are then laid on raised beds and turned regularly to ensure even drying. The whole process takes between 15 and 20 days, resulting in a clean and expressive natural.

It's expressive, but still calm and drinkable – a great everyday Ethiopia.
Works best as a filter coffee when you want something bright, fruity and easy to enjoy. Use v60, chemex or batch brew, grind medium and brew with water around 91-93°C to let the tangerine acidity and tropical fruit shine without sharpness.
In aeropress, it becomes slightly fuller and more rounded, with a bit more body and deeper chocolate sweetness. The brightness softens, but the fruit stays present.
As it cools, the cup opens up further – the fruit becomes more defined and the sweetness more pronounced, making it even more juicy and refreshing.
A great choice for daily brewing that stays consistent and satisfying.
